The salt from Zhounan is the result of perfect harmony between the weather elements that caress the land. The sun, wind and sea is what it takes to make true sun dried sea salt; true salt is unheated, thus retains essential trace minerals. Aided only by the warm sunshine, the seawater evaporates slowly, leaving behind tasty salt crystals.
Frost salt is the salt harvested in winter. In winter, the speed of crystallization is low so the crystals are solid. Frost salt somehow tastes sweetish and is suitable for flavoring when cooking or frying.
Fleur de sel is composed of the very first crystals that form naturally on the surface of salt evaporation ponds. Only under the proper weather condition could it be harvested. It has multilayer flavor and is suitable for seasoning and sprinkling.
