1 teaspoon peanut butter
1 tablespoon soy sauce
1 tablespoon fragrant vinegar
1 tablespoon white sesame oil
1 teaspoon chilli sauce or XO sauce
1 portion of 2mm noodle
Take a pot of water to a rolling boil and add a portion of the 2mm noodles. Boil for 5-10 min until al dente (or longer if preferred).
Mix the sauces & condiments till you get a smooth paste. Add the chilli sauce/ XO sauce only if you like the noodles to be spicy.
Toss the noodles with the sauce paste till it is evenly distributed. Add your favourite toppings - vegetables or some shredded meat. Get adventurous! You can make the noodles tangy-er with more vinegar, more fragrant with more sesame oil and with a thicker sauce with more peanut butter!
We added to our noodles a portion of pan-fried brussel sprouts, and ate it together with a whole steamed grouper imported from our farmer friends in South Taiwan.
