Master Zhang’s handmade brown sugar is made following traditional methods, using fresh sugar cane juice and longan wood fire. Heated over low heat and time, the juice slowly crystallises into reddish brown granules. It is suitable to be added to coffee, tea, or it can be used in a variety of desserts to express the flavor of brown sugar. It can also be eaten directly.

Brown sugar retains the same minerals that are present in sugar cane, such as calcium, potassium, iron, magnesium and folic acid. It also contains a variety of essential amino acids, such as lysine, malic acid, citric acid, etc. These amino acids are essential substances for synthesizing human proteins, supporting metabolism, and participating in human life activities, and have positive effects on promoting health.

張師傅柴手工黑糖運用傳統製作方式,用新鮮甘蔗原汁,用龍眼木柴燒加熱,慢慢讓時間及溫度結晶成紅褐色的手工黑糖,堅持黑糖的好品質每一個步驟都必須細心的處理。手工黑糖香味濃郁,口感不甜膩,適合搭配咖啡茶飲,或者做成各式甜點都可以完整表現黑糖的風味,也可以直接食用。

黑糖又稱為「紅糖」,原料都是甘蔗。黑糖因為較粗製才能保留較多的礦物質及維生素,  保留了不少礦物質及維生素,特別是鈣、鉀、鐵、 鎂及葉酸等,黑糖的營養成分諸多。 甘蔗含有多種人體必需氨基酸,如賴氨酸、蘋果酸、檸檬酸等,這些氨基酸都是合成人體蛋白質、支援新陳代謝、參與人體生命活動不可缺少的基礎物質,對促進健康有絕對的正面效用。

Taiwan's climatic conditions are very suitable for sugarcane growth because of the excellent water quality in the region, stable climate and moderate rainfall . Since the 17th century, Taiwan has been exporting sugar from her sugarcane production. Master Zhang’ recipe that is inherited from his father, uses cane sugar, and longan wood to roast the sugar. At first taste, one is hit with the sugar cane scent which is then cloaked by the longan smoked wood aroma. This is the special flavor of Master Zhang’s "black sugar".
