Fried Shallots in Lard. This hand-crafted condiment is made from ingredients found in the local market. The Masterchef hand picks high quality black pig and white pig meat cuts to cook in order to render the lard. Same with the red shallots, these are hand picked by the Masterchef, before they are put through the process of washing, slicing, frying to just the right amount for it to turn golden brown, crisp not burn. A very versatile sauce, one can spoon this over noodles, rice, vegetables, or any stir fry dishes. Amazing this is, the crispy shallots stay crispy for a long time!

本款「純手工紅蔥油酥」,以精選的在地食材純手工製作而成。在食材上,特別與優良肉商合作,選用黑體豬與白體豬的優質脂肪,手工烹炸成為豬油,確保油品的衛生與品質。

而紅蔥頭則是由師傅每日上市集親自挑選,先經過篩揀、剝皮、洗淨、瀝乾、切片等步驟,再放入鍋中以豬油烹炸酥脆,期間須時時留意火候的掌控,待紅蔥頭油炸至七分熟後,迅速自鍋中撈起靜置,以餘溫將紅蔥頭煨至全熟,才能製作出恰到好處的風味與口感!

片片金黃香脆的蔥酥,浸漬於充滿濃厚古早味的豬油中,口感酥透、香氣質樸濃郁,淋於麵類或白飯上,即成古早風味之紅蔥油飯、紅蔥乾拌麵,或於汆燙蔬菜中酌量淋上、加入肉絲米粉中拌炒…等各式家常料理,輕鬆便能烹煮出一道道誘人佳餚!
