After the fresh Aiwen mango is cut, it is baked for 24 hours in low heat, and is turned over every once in a while to ensure even dehydrating. Absolutely no artificial coloring, spices and preservatives are added. The sweet taste of Aiwen Mango is preserved!! This species of mango looks a bit like a flattened egg, with a dark red outer skin. The flesh is of a rich yellow colour, with fine fibres - when eaten, the texture is like that of dried apricot. Because of its sweetness, the Aiwen is also known as "apple mango".
