Mulberry Vinegar. Mulberry is a berry commonly grown in the Taiwanese countryside. It contains 18 kinds of amino acids and various vitamins such as vitamins B1, B2, C, A, D and carotene, glucose, fructose, calcium and iron. The source of mulberry vinegar comes from the farmers in Tainan. In particular, the mulberry varieties that are solid and elliptical are selected for vinegar, because the mulberry has a higher acidity, but the scent is stronger. After soaking with rice vinegar, the flavor of the mulberry is further enhanced.
