Also known as “perfume lemon” because of its vivid citron fragrance, these citrons are grown naturally without pesticides or chemical fertilizers. Its rind is full of essential oils, which explains the whiffs of citrusy fragrance when you open the bottle. The hand-sliced citron is dried in low heat to seal in the flavour. It is a labourious process, as 10 catty of lemons yield only 1 catty of dried slices. Soak in warm water (we recommend less than 80 degree celsius, just hot enough for the essential oils to diffuse out, but not hot enough to make it bitter) for about 5 minutes and you will get a cup of hot beverage that both detoxes and energises after a heavy lunch. Or brew it in cold water for a quick cool me down on a hot sunny afternoon - it is a healthy alternative to lemonade, without all the additives and sugar.
