The key to ensuring the seafood's freshness lies in reducing the number of freezing and thawing cycles it undergoes before reaching your kitchen. These prawns are harvested from the farm and immediately immersed in an ice-cold water spa. This sudden cold exposure shocks the prawns without harming them, prompting them to expel their poop.
Next, the prawns, now in a state of dormancy, are rapidly frozen to minimise damage to their muscle structure, preserving the rich flavours and nutritional value of the prawn meat. From farm to freezer, in less than 1hour!
Finally, they are vacuum-sealed in a bag and remain frozen throughout their journey from Taiwan to your kitchen, ensuring their quality.
How to enjoy
Thaw in room temperature water for about 5-10mins. Blanche until the prawn curls into a "C". You will know that the prawn is overcooked if the prawnhead touches the tail.

About the Farmer
Mr. Ke, a second-generation prawn farmer and former engineer, has meticulously fine-tuned the management of his land-based prawn farm. He cultivates prawns alongside mullet and milkfish, creating a natural ecosystem that offers the prawns ample exercise, nutrients (complemented by Mr. Ke's use of probiotics in their feed), and oxygen ( through mechanical aerators).
