The longan is grown in Tainan Dongshan - Taiwan's most famous region for the longans. Each longan is de-shelled by hand, and smoked in a traditional mud oven over 6 days and 5 nights using the wood from the longan tree. The larger longans are used, resulting in thicker flesh with a good bite. The smoked longan is combined with nourishing Snow Fungus in this classic dessert that is popular with the old and young.
