Lazy Day "Chee Pow Kai "- styled Seabass 纸包鲈鱼

There are some days when I’m just way too lazy to fire up the stove or deal with a pile of dishes. Especially on those hot or rainy days (which is like, every other day in Singapore….).
That’s when this “chee pow kai”-inspired cooking hack comes in handy!
Anyone else remember Union Farm’s famous paper-wrapped chicken? 😍 It's a genius idea, to wrap your favourite ingredient and its marinade in parchment paper tightly, and then deep fry it. Its absolutely delicious!

I miss Singapore everynow and then. Somehow I got reminded of this dish today, and modified it.
Recipe details
- We swopped the chicken with sea bass and laid it on the parchment paper.
- Added a simple marinade of soya sauce, sesame oil, rice wine, some aromatics, salt, and pepper.
- Fold in parchment paper, twist the ends like those old school sweet wrappers to prevent leakge.
- Throw it on a baking tray, and into the oven it goes. Easy peasy!
PS: with clean fish from #anyong, i didnt even bother to defrost and clean the fish before cooking it.
The best part? The parchment paper keeps all the juices locked in, and if you’re careful opening up the parcel, no juices escape, which means… no need to wash the baking tray! 🙌
