How to make your own Umeshu (plum wine)

The 5 Steps of Making Your Own Plum Wine:
1.Rinse the green plums thoroughly with clean water and lay them flat on a towel on the table to dry.
2.After drying, remove the stems from the plums. (The ripeness of the plums will also affect the flavour of the plum wine: green plums result in a refreshing taste with high acidity, while yellow plums offer a richer and smoother aroma.)
3.Place the plums, base liquor, and sugar in a ratio of 1:1:0.5 into prepared bottles. (For those who prefer a stronger alcoholic taste, increase the ratio of liquor.)
4.Choose a liquor with 30 degrees of alcohol content (such as gin, vodka, whiskey, or rice wine). For sugar, you can use rock sugar for a cleaner color of the wine body, or brown sugar to enhance the flavor.
5.Let it sit for a year to fully extract the flavor of the plums before opening and tasting next year. (If using liquor with an alcohol content below 30 degrees, you can also use a shorter pickling method with the same ratio, and it will be ready to drink in 1-3 months.)
