Mullet roe ( 烏魚子)from Taiwan is a delicacy in its own right. From as early as Tang Dynasty, the Chinese have been eating mullet roe. Today’s mullet roe version where it’s salted and sun-dried, is a tradition passed down from the Japanese. It’s known as karasumi in Japan and is a must-buy whenever the Japanese visit Taiwan. Italians call their version bottarga. It's high nutrition value make it tremendously popular with the old and young alike.
Wild caught mullet roe has a rich creamy texture with bits that lovingly cling to one’s teeth. It's fattier than the farmed mullet roe, and has the natural salty taste of the sea. Sun-drying it allows the mullet roe to absorb the flavours and tastes of the terroir of Taiwan.
